Apple Coffee Cake
This cake is lovely and moist. The apple in the middle of it, cooks to the consistency of a filling .... imagine apple pie filling in the middle of a cake, with a crunchy, nutty top ..... everything that is good and delicious about a cake !!!
- 9oz Yellow Cake Mix (just measure it out of a regular box of yellow cake mix)
- 1 (3.4oz) Package of Vanilla Pudding Mix
- 2 Eggs
- 1/2 Cup Sour Cream
- 1/4 Cup Butter, melted
- 2 Medium Tart Apples, peeled, cored, and shredded. (I used Honey Crisp apples)
- 1/2 Cup Sugar
- 1/4 Cup Chopped Walnuts
- 1 Teaspoon Ground Cinnamon
- In a bowl, beat cake mix, pudding mix, eggs, sour cream and melted butter for 2 minutes.
The mixture will be very thick.

- Pour half of batter into a greased 8"x 8" baking dish.
- Top with shredded apples.
- Combine sugar, cinnamon and walnuts, and sprinkle half of this mixture over the apples.
- Drop spoonfuls of the remaining batter over the apples (this just makes spreading easier).
- Spread batter over the apples.
- Top with the remaining sugar mixture.
- Bake at 350 Deg F, for 50 - 55 mins. A toothpick inserted in the center, must come out clean.
- Cool cake completely and enjoy !!!!
